Bean Stew

Ingredients:
- 2 cups fresh beans (or if unavailable dry beans)
- 1 tablespoon cooking oil
- I onion – chopped
- A clove of garlic
- 2 or 3 tomatoes grated (or soaked in boiling water for 5 minutes, peeled and then chopped)
- Green pepper
- Curry powder and salt to taste
- 1 or 2 sweet potatoes
Method:
- If you are using dry beans soak them overnight.
- Boil the beans until they are soft on medium heat.
- Heat the oil in a pan. Fry the onions until they are golden brown, add the garlic, and a teaspoon of curry powder (or as much as you want) and fry for about a minute.
- Add the tomatoes, green peppers and the beans, and the salt to taste.
- Simmer for about 15 to 20 minutes.
This can be served with Sweet Potatoes, Cassava, Plantains, Rice, Irish Potatoes, or Ugali/Pap/Mealie Meal (Maize Meal).
Sweet potatoes
Ingredients:
- 1 or 2 Sweet potatoes
Peel the potatoes and boil or steam or bake until they are soft.
Serve with Bean Stew.
